According to the Specialty Coffee Association of America (SCAA), coffee which scores 80 points or above on a 100-point scale is graded “specialty.” Specialty coffees are grown in special and ideal climates, and are distinctive because of their full cup taste and little to no defects. The unique flavors and tastes are a result of the special characteristics and composition of the soils in which they are produced.

The most acclaimed coffees from Guatemala are grown in the Antigua district at altitudes of 1600m to 2000 metres above sea level. The small scale producers still use traditional systems for cultivating, harvesting and processing the coffee berries. The result is an excellent coffee with floral aromas in the cup and the occasional hint of alpine herb scents. Very sweet-toned and chocolaty; full body and with the lightest acidity.
